What Happened When China Legalized Restaurants

    23/03/2026 | 37min
In the 1980s and ‘90s, China went through a massive economic transformation. New government policies allowed everyday people to open their own businesses and accumulate wealth. Rural folks moved to cities in huge numbers in search of opportunity. And for the first time, privately-owned restaurants were allowed to open. In the 40 years since, an entire restaurant scene has been created — something prior generations could never have imagined. So what does this scene look like? Dan travels to Beijing to find out. His first stop is at one of the most exclusive restaurants in the city, Chef 1996, for a 16-course dinner and a chat with the owners. The next day he hits up a beloved hot pot chain, Haidilao, where waiters put on dance performances with noodles, manicures are offered, and robots whiz around delivering dishes.

The Sporkful production team includes Dan Pashman, Emma Morgenstern, Andres O'Hara, Kameel Stanley, Jared O'Connell, and India Rice. Special thanks to Yebu Ji, Weihang Li and Jason Tang.

Padma Lakshmi Was An Ice Cream Mule (Reheat)

    20/03/2026 | 28min
Is Padma Lakshmi a model-turned-TV-star who's grown accustomed to the finer things? Or a down-to-earth mom who reuses takeout containers for her leftovers? Is she warm and hospitable, the kind of person who's excited to share her food with you? Or is she frank and snarky, the kind of person who compares her favorite dish to old bong water? Is she an Indian who grew up partly in America, or an American who grew up partly in India? Or is she all of the above? Dan sits down with cookbook author, food writer, and TV host Padma Lakshmi to talk about some of her earliest food memories from her grandmother's kitchen in India, her struggles to adjust to life in the US, and how she deals with the judgments people make about her body, and her brains.

This episode originally aired on December 6, 2016, and was produced by Dan Pashman, Shoshana Gold, Anne Saini, and Dan Charles. The Sporkful team now includes Dan Pashman, Emma Morgenstern, Andres O'Hara, Kameel Stanley, Jared O'Connell, and India Rice. This update was produced by Gianna Palmer.

No Somali Artifacts Were Harmed In The Making Of This Cookbook

    16/03/2026 | 34min
Somali cuisine is a mixture of many traditions, from meat prepared according to nomadic customs, to a spice mix made possible by medieval Indian Ocean trade routes. There are even pasta dishes, owing to Italian colonization until 1960 – and you’ll often find a banana served on the side. Ifrah F. Ahmed has made it her mission to document and preserve the food of Somalia in her new cookbook, Soomaaliya: Food, Memory and Migration. At a time when Somali and Somali-American culture is under threat, Ifrah’s work feels especially important. Somali culture prizes its oral tradition, but Ifrah has decided to write it all down: the history, the recipes, and her own story. This week, Dan visits Ifrah in her kitchen as she makes an iftar meal for Ramadan, and he tries his hand at making sambuus (a deep-fried meat dumpling).

Asma Khan Says Women Shouldn't Cook For Free

    09/03/2026 | 32min
The London restaurant Darjeeling Express is the place to go for an outstanding mutton kebab, and for celebrity sightings. But the chef behind this hotspot has no formal culinary training. Asma Khan started her cooking career hosting secret supper clubs in her apartment, when her husband was traveling for work. Now she's staffed her restaurant entirely with women, all of whom learned to cook as housewives and nannies. As she tells Dan, her advocacy is driven by the pain she faced as the second daughter in her family, in a society that prized boys over girls. We also hear the unlikely story of how her restaurant was funded and why she will absolutely never put papadams in a tuna sandwich.

This episode originally aired on May 16, 2022, and was produced by Dan Pashman, Emma Morgenstern, Andres O’Hara, Johanna Mayer, Tracey Samuelson, and Marcus Hahm. The Sporkful team now includes Dan Pashman, Emma Morgenstern, Andres O'Hara, Kameel Stanley, Jared O'Connell, and India Rice.
