“Healthy Elvis” Almond Butter & Banana Toast Yields 1 Portion INGREDIENT AMOUNT UNITMulti grain batard bread, 1 slice about 1” thick 1 eachAlmond butter 3 TBSPBananas, sliced 1 eachToasted almonds, coarsely chopped 1 TBSPToasted Coconut flakes, unsweetened 2 tspLocal honey ½ tspCreme fraiche or plain yogurt ½ tspCocoa nibs, toasted ½ tspFlake salt pinch METHOD1. Toast the sliced bread2. Spread the almond butter over the toast from end to end, making sure its evenly coatedso every bite gets almond butter.3. Peel then slice the banana in rounds and lay them all over the almond butter coveredtoast.4. Using a fork, drizzle the honey over the bananas, this will also help the other items stickto the toast.5. Sprinkle the top of the toast with cocoa nibs, toasted almonds, & coconut flakes.6. Using a spoon, drizzle creme fraiche or yogurt over the toast.7. Finish with a sprinkle of flake salt.
